Breakfast Salad Wrap

This savoury breakfast wrap is loaded with fresh fruit and creamy hummus for a filling breakfast that will last you until lunchtime. Lemon juice brightens the dish, and sliced scallions lend a tart onion taste that complements the cucumber wonderfully. You can make these the night before; simply wrap them firmly in plastic wrap and keep them in the fridge until you're ready to eat!

Serving Size: make 1 wrap

Prep time: 10 mins

Cook time: 20 mins



Ingredients:


1/4 cup chopped tomato

1/4 cup chopped cucumber

2 tbsp chopped scallions

1/2 tsp lemon juice

1 8-inch whole grain tortilla

2 tbsp oil-free hummus


Direction:


1- In a bowl combine chopped tomato, cucumber, scallion, and lemon juice; mix them gently.


2- Spread oil-free hummus on the tortilla and add salad mixture on top. Roll up burrito-style.
