Mushroom Tacos with Vegies and Avocado

Tacos for lunch, dinner, or even breakfast made with mushroom vegetable tacos and corn tortillas. Breakfast, to be particular.


With all of the vegetables utilized, these are high in fibre, protein, and brilliant color. Each time you prepare them, you may get creative and mix in your favorite vegetables.

Prep Time: 10 mins

Cook Time: 15 mins


Ingredients:


1/2 Large Bell Pepper Diced

1 Large Tomato Diced

1 Large Avocado Diced

1/2 Large Red Onion Diced

4 oz Mushrooms Diced

6 Corn Tortillas

1/3 Cup Salsa

1/3 Cup Hummus

1/2 tsp Chili powder

1/4 tsp Cumin

1/4 tsp Garlic powder

1/2 tsp Sea Salt

3 Leaves Romaine Lettuce diced



Direction:


1- In a pan with a little water, add the red onion, mushrooms, and bell pepper. Cook until the vegetables are soft.

2- Add Spices and Salt.

3- Toast the Tortillas until light golden.

4- Smear a tablespoon or so of hummus on one side of the corn tortilla. Fill the taco with the veggie mixture.

5- Serve with tomatoes, lettuce, avocado and salsa on top.
