Peach-Walnut Breakfast Bread

This is a terrific breakfast on the go because it's somewhat sweet, oil-free, and absolutely filling. I know you want to eat it all at once (I do, too), so cut it into single servings, wrap each in plastic wrap, and freeze until needed. This is also an excellent baked gift. Wrap it up and wrap it with a bow, and you're officially the best breakfast baker in town!

Ingredients:


11/2 cups unsweetened peach and applesauce

3/4 cup packed light brown sugar

1 tsp ground cinnamon

1/2 cup peach chunks

1/2 cup chopped walnuts

1/3 cup plain unsweetened almond milk or plant milk

1 tbsp ground flax seeds mixed with 2 tablespoons warm water

2 cups all-purpose or whole wheat flour

1 tsp baking soda

1/2 tsp baking powder

1 tsp salt


Direction:


1- Preheat the oven to 375°F.

2- In a large bowl, combine the peach-applesauce, brown sugar, almond milk, and flax mixture and stir until smooth and well mixed. Set aside.

3- In a separate bowl, combine the flour, baking soda, baking powder, salt, and cinnamon. Mix the dry ingredients into the wet ingredients just until blended. Stir in the walnuts and peach chunks, then transfer the batter to a loaf pan, spreading evenly and smoothing the top.

4- Bake for 25 to 30 minutes, or until golden brown and a toothpick inserted in the centre comes out clean. Cool for about 20 minutes in the pan before removing and cooling fully on a wire rack.
