Celery Soup

This creamy and flavorful celery soup is sure to hit the spot! Packed with nutrients and bursting with flavour, this recipe is the perfect way to warm up on a chilly day.


Servings: 4

Preparation Time: 10 minutes

Cooking Time: 35 minutes


Ingredients:

  • 400g Celery (sliced & tough strings removed)

  • 2 Cloves garlic (peeled)

  • 200g Potatoes (peeled & cut into chunks)

  • 700ml water

Directions:

  1. Add the celery, garlic and potatoes to a large saucepan

  2. Splash in a little water and add a pinch of salt.

  3. Cook stirring regularly, for 15 minutes, adding more water if the vegetables begin to stick.

  4. Pour in the 700ml of water and bring to a boil. Reduce the heat and simmer for an additional 20 minutes, or until the potatoes are falling apart and the celery is soft.

  5. Purèe the soup with a stick blender.

  6. Season to taste
